Lemon Polenta Waffles
|Buttermilk||1 1⁄4 Cup (20 tbs)|
|All purpose flour||1 Cup (16 tbs) (250 Milliliter)|
|Cornmeal||1⁄2 Cup (8 tbs) (125 Milliliter)|
|Granulated sugar||2 Tablespoon (25 Milliliter)|
|Grated lemon peel||1 Tablespoon (15 Milliliter)|
|Baking soda||1 Teaspoon (5 Milliliter)|
|Soft margarine||1 Tablespoon, melted (15 Milliliter)|
In bowl, whisk eggs with buttermilk.
In second bowl, combine flour, cornmeal, suger lemon peel and baking soda.
Stir dry ingredients into egg mixture.
Whisk in melted margarine.
Heat waffle iron for about 5 minutes, or according to manufacturer's directions.
Spoon batter into centre of hot grill and close.
Cook for a couple of minutes, or until waffles are done.
