Chicken Cacciatore (Polio Alla Cacciatore)
|Chicken pieces||4 Pound|
|Oil||1⁄2 Cup (8 tbs)|
|Onions||2 , minced|
|Green pepper||1 , chopped|
|Garlic||1 Clove (5 gm), crushed|
|Canned tomatoes||4 Cup (64 tbs)|
|Tomato puree||1⁄2 Cup (8 tbs)|
|Tomato paste||3 Tablespoon|
|Black pepper||To Taste|
|Mixed spice||1⁄2 Teaspoon|
|Red wine||1⁄2 Cup (8 tbs)|
|Flour||1 Cup (16 tbs) (Seasoned With Salt And Pepper)|
Toss chicken pieces in the seasoned flour.
Brown in the hot oil.
Add onions, green pepper and garlic and cook for ten minutes.
Add tomatoes, tomato puree mixed with tomato paste, salt, pepper, thyme and mixed spice and cook.
Uncovered, for 15-20 minutes.
Add the wine, cover and cook for about 45 minutes or until chicken is tender.
