Easy Italian Fish
|Orange roughy/Grouper fillets||24 Ounce (0.75 Inch Thick)|
|Tomato juice||2⁄3 Cup (10.67 tbs)|
|Italian salad dressing mix||1 1⁄3 Ounce|
|Green onions||1⁄4 Cup (4 tbs)|
|Green pepper||1⁄4 Cup (4 tbs)|
Arrange fish in a shallow 2-quart casserole with thickest portions to outside of dish.
Combine tomato juice, vinegar, and salad dressing mix, pour over fish.
Cover and marinate in refrigerator 30 minutes, turning once.
Sprinkle green onions and green pepper over fish.
Cover with heavy-duty plastic wrap, and microwave at HIGH for 6 to 7 minutes, turning dish around after 3 minutes, or until fish flakes easily when tested with a fork.
Let stand 1 minute.
