Bruschetta

If you have italian bread in stock try Bruschetta for tonight. This is pretty cool recipe and I love preparing this just for its unique tang. The flavor of Italian bread together with the seasoning spices is heavenly.
Ingredients
  Diagonal italian bread slices 8
  Olive oil 1 1⁄2 Tablespoon
  Roasted red peppers/Pimentos 7 Ounce
  Cherry tomatoes 4
  Chopped basil 2 Tablespoon
  Red wine vinegar 1 Teaspoon
  Capers 1 Teaspoon
  Minced parsley 1 Teaspoon
  Garlic 1 Clove (5 gm)
  Salt To Taste

Directions

Using 1 tablespoon olive oil, lightly brush one side of each of the bread slices.
Place bread on ungreased baking sheet, oiled-side up.
Bake in a preheated 350-degree oven 20 minutes, or until golden.
In a medium mixing bowl, combine red peppers, tomatoes, chopped basil, vinegar, capers, parsley and garlic, mix well.
Season with salt and red pepper flakes.
Just before serving, put a fresh basil leaf on each slice of bread so that the basil extends past the edge.
Top with red pepper mixture.
Drizzle remaining 1 teaspoon olive oil over tops of bruschettas.
Serve at room temperature.
