New Year Crostini And Bruschetta

Looking for a delicious, easy and elegant party appetizer? This episode of the RV Cooking Show shares some great RV destinations and shows you how to make crostini and 2 bruschetta appetizers...simple, simple, simple! Enjoy!
For crostini:
  Baguette 1 Medium
  Extra virgin olive oil 1 Teaspoon
  Salt 3 Pinch
  Herbs de provence 1 Dash
For tomato and olive bruschetta:
  Grape tomatoes 1 Pound, quartered
  Fresh basil 1⁄4 Cup (4 tbs), chopped
  Garlic 2 Clove (10 gm), minced
  Kalamata olives 15 Small, chopped
For chickpea bruschetta:
  Can chickpeas 15 Ounce, drained, rinsed, roughly chopped (garbanzo beans)
  Flat-leaf parsley 1⁄2 Cup (8 tbs), chopped
  Balsamic vinegar 2 Tablespoon
  Pepper 1⁄4 Teaspoon

1) Preheat oven at 325F.
2) Take baguette and slice it diagonally.

3) In a baking pan place single layer of baguette.
4) Drizzle some olive oil and sprinkle salt and put generous amount of herbs. Bake it for 12 minutes, until it becomes crispy.
Tomato and Olive Bruschetta:
5) Combined all ingredients, chickpeas, parsley, garlic, olive oil, balsamic vinegar, salt and pepper mix them well.

6) Spread a generous portion of blue cheese on crostini and drop few drops of honey.

7) Serve Crostini with tomato and olive bruschetta.

Awesome!! nicely done too... but honey and cheese?? do they go well together?? but all in all - really yum!!
