Low-Sodium Cheese Chicken
|Stove top stuffing mix package||6 Ounce|
|Garlic||2 Clove (10 gm), minced|
|Diced italian tomatoes||14 1⁄2 Ounce, undrained|
|Water/Chicken broth||1 Cup (16 tbs)|
|Canola oil||1 Cup (16 tbs)|
|Boneless, skinless chicken breast||1 1⁄2 Pound|
|Dried basil||1 Tablespoon|
|Shredded mozzarella cheese/Italian blend cheese||1 Cup (16 tbs) (Kraft 2% Milk)|
|Chicken broth packet||1 1⁄2 Ounce|
In a large bowl, combine stove top stuffing mix, garlic, tomatoes and liquid.
Stir them together.
Preheat skillet to 300 degrees.
Spray the bottom of the skillet with canola oil, add chicken breast.
Let it brown.
Add chicken broth, cover chicken with chicken broth only when cooking in electric skillet.
Add basil, cheese and the stuffing mix, cover with the lid.
Lower the heat to 250 degrees for 15 minutes.
