This Polenta is a Mediterranean treat that is absolutely delicious and healthy too. A quick and easy way to make a great tasting meal. Serve your family a sumptuous and nutritious meal with the Polenta with Mediterranean veggs recipe.
  Polenta 150 Gram
  Butter 40 Gram
  Bell pepper 1
  Zucchini 1
  Egg plant 1
  Tomato 1
  Gazpacho 60 Milliliter
  Olive oil 100 Milliliter
  Basil leaves 10

Roast bell peppers with olive oil and some basil leaves
-Remove skin
-Roast zucchini, egg plant slices, and olive oil
-Set aside with little olive oil
-Cook polenta, when hot, put in a tray spread polenta evenly, layer and arrange bell peppers, egg plant and basil leaves
-Then top it up with rest of the polenta and keep in walk to set
-when set ,cut in rectangles ,place in a plate put gazpacho around and drop the roasted tomato on top of polenta and serve
