Sun-dried Tomato and Shiitake Risotto - The Vegan Zombie

After foraging for some mushrooms in the midst of a zombie apocalypse, Jon finds what he needs and makes a delicious sun-dried tomato and shiitake mushroom risotto.
Ingredients
  Veggie stock 8 Cup (128 tbs), boiled (6-8 cups)
  Olive oil 2 Tablespoon, divided
  Sliced shiitake mushrooms 1 1⁄2 Cup (24 tbs)
  Sun-dried tomatoes in olive oil 1 Cup (16 tbs), thinly sliced
  Garlic 3 Clove (15 gm), shredded
  Balsamic vinegar 1 Tablespoon (or 1/4 cup white wine)
  Arborio rice 1 1⁄2 Cup (24 tbs)
  Sea salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Paprika 1⁄2 Teaspoon
  Oregano 1⁄2 Teaspoon
  Nutritional yeast 1⁄2 Cup (8 tbs)
Directions

MAKING
1. In a large pan, add in 1 tablespoon of olive oil, shiitake and sun dried tomatoes. Sauté for 5 minutes.
2. Add in the garlic and stir for a minute.
3. Deglaze the pan with balsamic vinegar and cook for a minute. Take out the veggies and place in a bowl.
4. In the same pan, add in the remaining olive oil and sauté the Arborio rice for a minute.
5. Pour in some veggie broth and stir until rice absorbs all the liquid. Season with sea salt, pepper, paprika and oregano.
6. Add in the veggies and pour in broth and repeat the process until all the liquids get absorbed, for 10 minutes.
7. Add in the nutritional yeast and stir.

SERVING
8. Serve the risotto with some salad.
