Italian Dressing Marinated Vegetables
|Water||1 1⁄4 Cup (20 tbs)|
|Balsamic vinegar||2 Tablespoon|
|Apple cider vinegar||1⁄3 Cup (5.33 tbs)|
|Lemon juice||2 Tablespoon|
|Italian seasoning blend||2 Teaspoon|
|White pepper||1⁄4 Teaspoon, optional|
|Garlic||2 Clove (10 gm)|
|Finely chopped parsley||1⁄4 Cup (4 tbs)|
|Mixed cut vegetables||2 1⁄2 Cup (40 tbs), carrots cut in winch rounds, celery cut in 1/4-inch pieces, red onion rings, green beans cut in 1-inch pieces, red or green pepper chunks cut 1-inch pieces, small florets of broccoli or cauliflower|
Combine water, vinegars, lemon juice, seasonings, garlic and parsley in large saucepan.
Bring to boil, cover and simmer 10-15 minutes until desired doneness.
Remove from heat.
Cool to room temperature, cover and chill for at least 2-3 hours before serving.
Use a slotted spoon to serve.
