Italian Dressing Marinated Vegetables

  Water 1 1⁄4 Cup (20 tbs)
  Balsamic vinegar 2 Tablespoon
  Apple cider vinegar 1⁄3 Cup (5.33 tbs)
  Lemon juice 2 Tablespoon
  Italian seasoning blend 2 Teaspoon
  White pepper 1⁄4 Teaspoon, optional
  Garlic 2 Clove (10 gm)
  Finely chopped parsley 1⁄4 Cup (4 tbs)
  Mixed cut vegetables 2 1⁄2 Cup (40 tbs), carrots cut in winch rounds, celery cut in 1/4-inch pieces, red onion rings, green beans cut in 1-inch pieces, red or green pepper chunks cut 1-inch pieces, small florets of broccoli or cauliflower

Combine water, vinegars, lemon juice, seasonings, garlic and parsley in large saucepan.
Add vegetables.
Bring to boil, cover and simmer 10-15 minutes until desired doneness.
Remove from heat.
Cool to room temperature, cover and chill for at least 2-3 hours before serving.
Use a slotted spoon to serve.
