Eggplant, Roasted Red Pepper and Cheese Panini

In Italy, the word PANINO, means a sandwich made from bread other than sliced bread such as ciabatta or baguette. The panino is also filled with deli ingredients such as ham, cheese, salami and other food and served warm after being pressed by a warming grill. In the US. Canada and England, panino got adopted as panini.

Ingredients

Ciabatta bread/Ciabatta rolls 4 , slice
Eggplant 1 Medium , sliced into " slices
Jarlsberg cheese 1 Cup (16 tbs) , shredded
Fresh basil leaves 16 (4 leaves per panini)
Roasted red peppers 1 Cup (16 tbs) , sliced
Extra virgin olive oil 1 Tablespoon (as needed)
Italian seasoning To Taste
Garlic salt To Taste
Pepper To Taste

Directions

MAKING

1. Pour some olive oil onto a large plate. With a pastry brush, coat both sides of the eggplant with oil.

2. Sprinkle garlic salt and pepper over the slices. Place eggplant slices on greased panini (or other type) of grill. Cook until tender and seared.

3. Take the plate with olive oil and with the pastry brush, gently brush each sides of Ciabatta bread with oil.

4. Place oiled bread slices on the grill. Cook until slightly seared and remove from grill. If needed (bread should be slightly moist with oil), lightly run the pastry brush over each side of the bread once more.

5. Place eggplant slices on both sides of the bread. Add shredded Jarlsberg cheese on top. Place 2 fresh basil leaves on each side.

6. Add sliced fire roasted red peppers on top, sprinkle Italian seasoning and more shredded cheese on each side of the sandwich.

7. Place 2 sides on top of one another forming a Panini and grill for a few minutes or until cheese is melted and bread is golden.

SERVING

8. Serve immediately with a green salad and enjoy!
