CFJC Midday - Zucchini !

Ingredients

Baby tomatoes 2 Cup (32 tbs) , quartered or halved (red and yellow)
Prima vera spice blend 3 Tablespoon
Extra virgin olive oil 1/2 Tablespoon (as needed (a drizzle))
Balsamic vinegar 1 Tablespoon
Basil leaves 1 Tablespoon , torn (as needed)
Zucchini 1 , sliced or peeled like noodles

Directions

MAKING

1. In a large bowl, combine prima vera spice blend, olive oil, balsamic vinegar, and tomato. Mix well.

2. Sprinkle fresh basil on top.

SERVING

3. Serve bruschetta on top of zucchini slices or raw zucchini noodles.

TIPS

If desired you may sprinkle Parmesan or serve on top of bread.
