Baked Pesto Chicken
|Boneless, skinless, chicken breasts||4|
|Basil pesto||1⁄2 Cup (8 tbs) (Use fresh or pre-packaged)|
|Tomato||1 , sliced|
|Shredded mozzarella cheese||1⁄2 Cup (8 tbs)|
1)Preheat oven to 400 degrees F.
2)Line baking sheet with heavy-duty foil.
3)Place chicken and pesto in medium bowl and toss it around to coat it thoroughly.
4)Place the chicken on baking sheet.
5)Bake for 20-25 minutes or until chicken is not pink in center anymore.
6)Remove from oven; top with tomato slice and cheese.
7)Bake for another 3-5 minutes or until cheese is melted.
8)Serve hot with your choice of vegetables or sides and enjoy!
