Tomato and Chicken Penne

Diced tomatoes, fresh basil and chicken make this a delicious Italian dish to serve up in a jiffy!

Ingredients

Olive oil 1/4 Cup (4 tbs)
Garlic 1 Teaspoon , chopped
Canned diced tomatoes 28 Ounce , drained
Fresh basil 1/2 Cup (8 tbs) , chopped
Boneless skinless chicken breast 2 Pound , cooked and cubed
Penne pasta 16 Ounce , cooked
Mozarrella cheese 8 Ounce , shredded
Salt and pepper To Taste

Directions

MAKING

1. In a skillet, heat oil over medium heat, add garlic and sauté for one minute. Add in tomatoes and basil, cook for another 2 minutes.

2. Add chicken, sauté for about 5 minutes, until heated through. Transfer to a large serving bowl, add pasta and cheese, toss gently to mix. Season with salt and pepper, mix again.

SERVING

3. Serve with your choice of beverage.
