Italian Lentil Salad

Nothing could be more refreshing and healthy like a freshly tossed salad! Here’s an amazing salad recipe which will boost for energy level!!
Ingredients
  Lentils 200 Gram
  Grape tomatoes 1 Cup (16 tbs), quartered
  Mustard greens/Arugula 1 Cup (16 tbs) (raw)
  Salt 1⁄2 Teaspoon
  Cracked black pepper 1⁄2 Teaspoon
  Parmesan reggiano 1 Ounce, shaved
  Olive oil 1 Tablespoon
  Wine vinegar 1 Tablespoon
Directions

MAKING
1.Cook lentils in boiling water with a pinch of salt, according to packet instructions. Keep them al dente and do not overcook them.
2.In a large bowl, combine the tomatoes, lentils and mustard greens.
3.Add olive oil and red wine vinegar
4.Season with salt and pepper. Toss gently.

SERVING
5. Serve topped with shaved Parmesan reggiano cheese.
