1 Cup (16 tbs), quartered
1 Cup (16 tbs) (raw)
Cracked black pepper
1 Ounce, shaved
1.Cook lentils in boiling water with a pinch of salt, according to packet instructions. Keep them al dente and do not overcook them.
2.In a large bowl, combine the tomatoes, lentils and mustard greens.
3.Add olive oil and red wine vinegar
4.Season with salt and pepper. Toss gently.
5. Serve topped with shaved Parmesan reggiano cheese.
