Use a rotisserie chicken and ready made cheese tortellini to make this delicious soup. This is a Real Simple recipe. Great for a day when you have little time to cook or just want a delicious soup without going to much trouble.
4 , cut into bite-size pieces
Low-sodium chicken broth
7 Cup (112 tbs)
1⁄2 Cup (8 tbs), shredded
2 Tablespoon, chopped finely
4 Tablespoon, grated
1. In a large saucepan, simmer the carrots in the broth until tender, 15 minutes.
2. Add in the tortellini and simmer until for 4 minutes.
3. Stir in the chicken and cook, stirring occasionally until heated through, 2 minutes, more; season with kosher salt and a sprinkle of parsley.
4. Garnish Tortellini Soup with parmesan soup and serve with toasted brown bread.
A can of rinsed cannellini beans can be added to make the soup even heartier and shaved or grated Parmesan cheese can be sprinkled over the top.
