Aparagus Ricotta Frittata

Great asparagus dish loaded with protein! Easy, healthy, affordable, nutritious meal!
Ingredients
  Ricotta cheese 1⁄2 Pound
  Eggs 8 Medium
  Milk 1 1⁄2 Cup (24 tbs)
  Asparagus 1 Pound, woody ends cut
  Gruyere cheese 1⁄2 Pound, grated
  Salt 1 Pinch (to taste)
  Pepper 1 Pinch (to taste)
  Dijon mustard 3 Tablespoon
  Sour cream 1 1⁄2 Cup (24 tbs)
Directions

GETTING READY
1. Wash the asparagus and cut off the woody part.
2. In a large bowl, add the eggs. Beat them lightly.
3. Pour the milk and whisk till combined.
4. Season with salt and pepper. Add the Dijon mustard. Whisk well to combine all the ingredients. Set aside.
5. Preheat the oven to 350 degrees.

MAKING
6. Take a baking dish. Layer the bottom with Ricotta and Gruyere cheese.
7. Place the asparagus on it in a single layer.
8. Pour the egg- milk mixture over the asparagus.
9. Spread the sour cream on this.
10. Sprinkle paprika over it and bake for 60 minutes.

SERVING
11. In a serving plate serve the frittata hot.
