Grandmother's Italian Stew - Part 1

This is my Grandmother's recipe for her classic Italian stew. It is a family favorite.
Ingredients
  Italian sausage 2 Pound (sweet)
  Diced tomatoes 2 Can (20 oz)
  Portobello mushroom 8 Ounce, chopped
  Yellow onion 1⁄2 Large, chopped
  Red bell pepper 1 , chopped
  Green bell pepper 1⁄2 , chopped
  Italian pepper 1 Cup (16 tbs), chopped
  Potatoes 6 , chopped
  Shallots 2 Tablespoon, chopped
  Garlic 4 Clove (20 gm), chopped
  Olive oil 1 Tablespoon
  Dried basil 1 Tablespoon
  Dried oregano 1 Tablespoon
  Sugar 1 Teaspoon
  Parmesan cheese 1 Cup (16 tbs), grated
Directions

GETTING READY
1) Roughly chop garlic and shallot.
2) Chop vegetables into large chunks.

MAKING
3) To a large pot, add olive oil and keep on medium heat.
4) Stir in garlic and shallot.
5) To the garlic and shallot, add Italian sausage and brown.
6) Once the sausage has browned, add the chopped vegetables and combine.
7) Add chopped potato and mix.
8) Cover and allow to reduce for an hour, stirring every 15 minutes.
9) After an hour, stir in basil and oregano.
10) Add sugar and mix.

SERVING
11) Serve hot garnished with grated Parmesan cheese. Accompany with a crusty and hearty bread.
