Rigatoni With Pears And Gorgonzola

Delightfully mild yet layered with flavor this amazing pasta dish is a unique tribute to the traditional Italian combination of pears, cheese and walnuts. I originally was served this dish when visiting in Italy and was completely surprised at the subtleness of the gorgonzola and pears! The addition of walnuts adds not only a nice crunch but just a hint of tartness to compliment the pears. If you want, substitute non fat half and half for full cream without any loss of creaminess. Don't be afraid of using your favorite blue cheese if gorgonzola is not available in your local market!
Ingredients
  Rigatoni 8 Ounce
  Bacon 1 Tablespoon, chopped (about 1 slice)
  Gorgonzola/Blue cheese 1 Cup (16 tbs)
  Walnuts 1 Cup (16 tbs)
  Butter 1 Cup (16 tbs)
  Pear 1 Large, peeled and chopped
  Parsely 1 Cup (16 tbs), chopped and divided
  Cream 1 Cup (16 tbs)
  Salt 1 Teaspoon
  Cracked black pepper 1 Teaspoon
  Extra virgin olive oil 2 Teaspoon
Directions

MAKING
1.Cook pasta for about 14 minutes in salted boiling water till al dante.
2.In a large frying pan crisp the bacon over medium or high heat.
3.Add gorgonzola,walnuts,butter,pear and half of the parsely.
4.As the gorgonzola begins to melt add the cream and simmer for some time.
5.Add the drained pasta to the sauce.(keep aside around 3 tablespoon of pasta water).
6.Spoon in the pasta water and stir till the pasta absorbs the liquid.

SERVING
7.Drizzle some olive oil and sprinkle parsley on top before serving hot.

TIP
Always salt your pasta.
Add a tablespoon or 2 of pasta cooking water to your sauce.
