Italian Octopus Carpaccio

Hi GialloZafferano viewers and welcome to our kitchen. Today we'll be making octopus Carpaccio. This is an interesting and unusual way to prepare the usual boiled octopus. To make it, you'll need a plastic bottle -- reuse one left over from bottled water or any other drink.

Directions

MAKING
1) Remove the eyes and the beak of the octopus by making a wedge and cutting it out
2) In a pot place the celery, carrot, juniper berries, peppercorns and onion
3) Add water and vinegar to the pot
4) Add the octopus to boil, by submerging the tentacles little by little into the water till they begin to curl
5) Once the octopus is cooked cut them into 1/4ths
6) Place the tentacles in a bottle and the press down till the liquid is all drained
7) Once its drained, seal the bottle and keep in the refrigerator for about 6 hours
8) Slide the octopus out and cut them
9) Prepare the dressing by mixing the lemon juice, olive oil, salt and pepper
10) Mince the garlic and chop the parsley finely
11) Place the chopped octopus on a plate, pour the dressing on top and top with garlic and parsley

SERVING
12) Serve the dish chilled
