Italian Mascarpone And Ricotta Pie

Directions

MAKING
1) Separate the eggs into yolks and whites
2) Discard the whites and keep the yolks
3) Add the mascarpone to the yolks
4) Also add the ricotta
5) Whip the cheeses till smooth
6) Add the sugar to the cheeses
7) Add the vanilla sugar and the potato starch and keep mixing till smooth
8) Tip in the chocolate pearls
9) Grease a 10 inch and flour it thoroughly
10) Take out the pastry from the fridge and divide it into two
11) Roll out one onto a floured surface
12) Cover the base of the pan and also border the tin about 2 inch
13) Pour in the filling
14) Level the top with a spatula
15) With the remaining pastry half make a grid on top
16) Bake in the oven for 40 minutes at 150C
17) Allow to cool for about half hour
18) Un mould once cold

SERVING
19) Serve into wedges and serve
