Mussels Marinara

  Mussels in the shell 2 Kilogram, washed
  Olive oil 2 Tablespoon
  Onion 1⁄2 Medium, chop
  Carrot 1 Medium, chop
  Green pepper 1⁄2 Medium, chop
  Garlic 5 Clove (25 gm), slice
  Dried oregano 1 Teaspoon
  Dried basil 1⁄2 Teaspoon
  Dried sweet red pepper flakes 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Ground pepper 1⁄2 Teaspoon
  Sambal oelek 1⁄2 Teaspoon
  Red hot sauce 1 Teaspoon (Franks)
  Lager beer/Stock 3⁄4 Cup (12 tbs)
  Crushed tomatoes 2 Cup (32 tbs)
  Fresh basil leaves 1 Tablespoon

1. Wash, scrub, de bearded and rinse the mussels, set aside.
2. Chop onion, carrots, and green pepper, thinly slice the garlic, finely chop the fresh basil, set aside.

3. In a large deep pot, pour olive oil and sauté the onions, carrots and green pepper and sweat for 2 minutes.
4. Add garlic and fry for 2 minutes, add dried oregano, dried basil, dried sweet red pepper flakes, salt and ground pepper, stir everything well.
5. Add the hot sauce and sambal, mix add tomato and cook for 3 minutes, covered.
6. Pour beer and give it a good stir, bring it to a boil and add the mussels.
7. Stir everything and coat the mussels, cook until the mussels open up.
8. Transfer in a serving bowl, garnish with flat parsley.

9. Serve the mussels marinara along with pasta.
