Almond Pesto With Cucumber Noodles

Ingredients
  Raw almonds 1 Cup (16 tbs), soaked (Drained and Dried)
  Fresh basil 2 Cup (32 tbs)
  Sun dried tomatoes 8 (Soaked In Olive Oil Or Water)
  Garlic 1 Clove (5 gm) (Peeled)
  Whole peppercorns 12
  Sea salt 1⁄2 Teaspoon
  Cucumber 1 Medium
Directions

MAKING
1. Using the gizmo make noodles out of the cucumber, place it in a bowl and drain the excess water and drink.
2. In the blender combine almonds, basil leaves, sun dried tomatoes, garlic, pepper corns and sea salt.
3. Blend at high speed until the mixture is smooth and creamy but still dry.

SERVING
4. Mix the almond pesto with cucumber noodles and serve immediately.
