Mother's Day Frittata

In this episode, our friends from Noble Meadows Farms supplied us with their fresh Heritage chicken eggs and delicious feta goat's cheese. With ingredients this fresh, we made a simple yet extraordinary frittata for some friends during our Easter brunch. With Mother's Day coming up, why don't you give this recipe a go? Ingredients
  Butter 2 Tablespoon
  Onion 1 Medium, diced
  Bacon 1 Medium, cut into pieces
  Red pepper 1⁄2 Cup (8 tbs), diced
  Potatoes 1⁄2 Cup (8 tbs), diced
  Eggs 5 Medium, beaten
  Feta cheese 1⁄4 Cup (4 tbs), crumbled
Directions

MAKING
1. Take a skillet and melt butter in it. Add onion and bacon. Fry for a while til the smoky flavor is rendered.
2. Once they are done, pour in the beaten eggs and let them cook from the bottom. Then add on top crumbled feta cheese.
3. Then push this into a broiler until the eggs on top are done. Once done plate the fried eggs.

SERVING
4. Serve warm garnished with some diced tomatoes and bell pepper.
