Ingredients
  Brains 4 , cooked
  Eggs 2 , slightly beaten
  Cold water 2 Teaspoon
  Parmesan cheese 1⁄2 Teaspoon, grated
  Parsley 1⁄2 Teaspoon, chopped
  Salt 1⁄4 Teaspoon
  Pepper 1 Pinch
  Breadcrumbs 1⁄2 Cup (8 tbs)
  Oil 2 Cup (32 tbs) (For Deep Frying)
For sauce
  Butter 1 Tablespoon
  Tomatoes 3 Cup (48 tbs), sliced
  Celery stalk 2 , chopped
  Onion 1 , sliced
  Bay leaf 1
  Cornflour 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Sugar 1⁄2 Teaspoon
  Water/Stock 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1)Cut the brains into quarters.

MAKING
2)Mix beaten eggs, water, cheese, parsley, salt and pepper and blend it.
3)Dip the pieces of brain in the mixture, and roll them in breadcrumbs.
4)Fry it in hot oil till it turns golden brown, then drain on paper.
5) For preparation of sauce melt the butter in a saucepan and fry the tomato slices, chopped celery, slice of onion and bay leaf until soft.

FINALIZATION
6)Cover it and simmer for 15 minutes, then press through a sieve.
7)Blend the corn flour with the salt, pepper, sugar and a little water or stock, add to the tomato puree and stir over medium heat until the sauce boils and thickens.

SERVING
8)Simmer for 2 minutes before serving with sauce.
