Microwave Garlic and Shrimp Scampi
|Butter||1⁄4 Cup (4 tbs)|
|Garlic cloves||4 Large, finely diced|
|Chopped parsley||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|Grated parmesan cheese||2 Teaspoon|
|Medium shrimp||1⁄2 Pound, shelled and deveined|
1. In a 1 1/2 quart glass casserole, cook butter on ROAST (7) for 1 1/2 minutes.
2. Add garlic, cook on HIGH (9) for 1 1/2 minutes until butter is bubbly.
3. In a bowl mix in Parmesan cheese, parsley, lemon juice and shrimp and cook on HIGH (9) for 2 minutes until shrimp is cooked.
4. Serve the shrimp scampi with the cooked sauce spooned around on a serving dish.
