Chicken Cacciatore With Shitake Mushrooms

Ingredients
  Chicken 5 Pound, cut into pieces (1 whole)
  Olive oil 1⁄2 Cup (8 tbs)
  Butter 4 Tablespoon
  Onion 1⁄3 , chopped
  Shitake mushrooms 1⁄2 Pound, sliced
  Garlic 3 Clove (15 gm)
  Dry white wine 3⁄4 Cup (12 tbs)
  Bay leaves 2
  Basil 1 Teaspoon
  Black pepper 1⁄2 Teaspoon
  Tomato sauce 5 Tablespoon
  Brandy 2 Tablespoon
  Seasoned salt To Taste
Directions

MAKING
1. In a large skillet add olive oil and saute thec chiken, till it turns golden brown in color. This shall take approx 20 minutes.
2. In another skillet add butter and let it melt.
3. Add onions and mushrooms and saute it till it turns golden brown in color.
4. Add garlic with the ingredients.
5. Cook for 4 minutes.
6. Spoon the onions, mushrooms and garlic on the chicken. Add wine.
7. Add basil, pepper and bay leaves till it mixes well.
8. Simmer uncovered for 8 minutes.
9. Add tomato sauce and salt as per taste.
10. Cook the ingredients uncovered for 15 minutes.

SERVE
11.Serve Chicken Cacciatore with brandy poured on top
