Pesto Sauce For Minestrone Soups
|Fresh basil leaves/Fresh parsley leaves||1 Cup (16 tbs)|
|Parmesan cheese||1⁄2 Cup (8 tbs), grated|
|Olive oil||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm)|
1) In a bowl, place together basil, cheese, olive oil and garlic.
2) Using hand blender, blend the basil mixture at high speed until smooth.
3) Put the pesto in a container and place it in a refrigerator.
4) Use as desired, to top desired soups.
