Chicken Cacciatore With Mushrooms
|Fryer chicken||3 1⁄2 Pound, disjointed|
|Freshly ground black pepper||1⁄2 Teaspoon|
|Special oil||2 Tablespoon|
|Chopped onions||3⁄4 Cup (12 tbs)|
|Canned italian style tomatoes||2 Cup (32 tbs)|
|Green pepper||1 , diced|
|Sliced mushrooms||1⁄2 Cup (8 tbs)|
|Dry red wine||1⁄4 Cup (4 tbs)|
|Minced parsley||2 Tablespoon|
1 Wash the chicken throughly and dry.
2 Remove as much fat as possible.
3 In a deep skillet or casserole, heat the oil and brown the chicken and onions in it.
4 Add the tomatoes along with green pepper, mushrooms, oregano and wine.
5 Cook covered over low heat for 50 minutes or until tender.
6 Sprinkle with parsley and serve.
