Finocchio A La Grecque
|Dry white wine||3 Cup (48 tbs)|
|Olive oil||4 Tablespoon|
|Tomato paste||2 Tablespoon|
|Grated lemon rind||1|
|Dried thyme||1⁄2 Teaspoon|
|Freshly ground pepper||To Taste|
|Finocchio||4 Large, trimmed and cut into quarters|
Combine all the ingredients except the finocchio in a heavy casserole.
Bring to the boiling point.
Lower heat to very low and add the finocchio.
Simmer covered for 15 to 20 minutes or until the finocchio is tender but still firm.
Transfer the finocchio to a deep serving dish.
Over high heat, cook the pan liquid until it is reduced by a third; this process intensifies the flavor.
Pour over the finocchio.
Chill before serving.
