Italian Cheese Pie
|Italian ricotta cheese||1 Pound|
|Eggs||1⁄4 , beaten|
|Sugar||1⁄4 Cup (4 tbs)|
|Chopped pistachio nuts||1⁄2 Cup (8 tbs)|
|Slivered citron||1 Tablespoon|
|Chopped candied orange peel||1 Tablespoon, chopped|
Line an 8-inch pie plate with 1/2 the pastry.
Combine re- maining ingredients and mix well.
Pour into pastry shell.
Roll out remaining dough and cut in strips.
Arrange in lattice fashion on top of filling.
Bake in a moderately hot oven (375°F.) 20 to 30 minutes, or until browned.
Serve warm or cold.
