Fagioli Con Caviale
|White beans||1⁄2 Pound, soaked|
|Pepper||To Taste, grated|
Drain water from beans.
Put in pot with 6 cups cold water, no salt.
Simmer, covered, very slowly until tender, about 2 1/2 hours.
Keep heat as low as possible.
This helps prevent beans from breaking.
When ready to serve, remove beans from pot, without liquid.
Mix with caviar.
Dress with oil, salt and pepper to taste.
Serve with lemon quarters.
