Easy Caponata

Ingredients
  Aubergines 2 Large
  Tomatoes 4 Large
  Onion 1 Large
  Garlic 3 Clove (15 gm)
  Capers 3 Tablespoon
  Sugar 2 Teaspoon
  Oregano 1 Tablespoon
  Green peppers 6
  Olives 1 Tablespoon, stoned
  Oil 4 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1. In a large saucepan heat the oil and fry all the peeled and chopped vegetables together.
2. Then add the herbs, season, cover and simmer gently till vegetables are tender.
3. Add capers and olives and stir well.

SERVING
4. Serve hot or cold with the desired garnish.
