Chicken Parmigiana

Ingredients
  Chicken breast halves 6
  Egg 1 , beaten
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Bread crumbs 1 Cup (16 tbs)
  Eggplant 1 Medium (In 3/4-Inch Slices)
  Canned pizza sauce 10 1⁄2 Ounce (1 Can)
  Mozzarella cheese slice 6
  Grated parmesan cheese/Other processed cheese 1 Tablespoon
Directions

MAKING
1) In a bowl, beat the egg, salt and pepper together.
2) Dredge the breast chicken halves in the mixture, then coat with the bread crumbs.
3) In a skillet, saute the chicken in the butter.
4) In a slow cooker, place the eggplant, then top with the chicken breast halves.
5) Then pour over the pizza sauce.
6) Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
7) Add the mozzarella cheese slices and sprinkle with the grated cheese on top.
8) Cover and cook on HIGH for 10 to 15 minutes.

SERVING
9) Serve immediately on individual serving plates.
