Rustic Style Bruschetta

Ingredients
  Ciabatta bread 100 Gram (4 slices - each 25 gram)
  Garlic clove 1 Medium
  Green olive 1⁄2 Cup (8 tbs)
  Red onion 1 Tablespoon, finely chopped
  Cherry tomatoes 1⁄2 Cup (8 tbs)
  Fresh basil 1⁄2 Cup (8 tbs) (handful)
  Olive oil 1 Tablespoon
  Parmesan cheese 1⁄2 Cup (8 tbs), freshly grated
  Salt 1 Teaspoon (to taste)
  Pepper 1⁄2 Teaspoon (to taste)
Directions

MAKING
1. Toast four slices of ciabbatta and then rub the top of each slice with the raw garlic.
2. Roughly chop the olives and tomatoes and mix with the finely chopped red, the torn basil leaves and a little splash of olive oil.
3. Top each slice of toast with the mixture and the sprinkle some freshly grated parmesan (not the nasty smelling long life stuff) over each before putting under the grill until the cheese browns off.

SERVING
4. Serve immediately with an equally interesting cocktail.
