Zabaglione With Grand Marnier
|Champagne/Sauterne||1⁄4 Cup (4 tbs)|
|Sauterene/Champagne||1⁄4 Cup (4 tbs)|
|Orange zest||1 Tablespoon|
|Grand marnier||3 Tablespoon|
|Heavy cream||1 Cup (16 tbs), whipped|
1) On a double boiler placed over simmering water,lightly beat the egg yolks and sugar until a thick and pale yellow mixture forms.
2) Now add the wine and orange zest and continue cooking, whisking thoroughly, until the mixture thickens to a consistency to coat the back of a spoon.
3) Add Grand Marnier into the above mixture and give a good stir.
4) Serve warm or chilled over fruit or pour into dessert glasses and serve with a swirl of whipped cream or else chill the zabaglione, fold in whipped cream, and serve in dessert glasses.
