Sicilian Cake

Ingredients
  9 inch pound cake 1 (9 X 3 Inch)
  Ricotta cheese 16 Ounce
  Whipping cream 2 Tablespoon
  Sugar 1⁄4 Cup (4 tbs)
  Sherry 3 Tablespoon
  Candied fruit 3 Tablespoon, coarsely chopped mixed
  Semi sweet chocolate squares 2 , coarsely chopped
For chocolate frosting
  Semi sweet chocolate 12 Ounce, cut in small pieces
  Strong black coffee 3⁄4 Cup (12 tbs)
  Butter 1⁄2 Pound, cut into 1/2 inch pieces and chilled
Directions

GETTING READY
1. Prepare the pound cake by trimming off the ends and crusts of the cake
2. Level the top of the cake if it’s rounded
3. Cut the cake horizontally into 1/2" to 3/4" thick slices.
4. Prepare the chocolate frosting, in a large saucepan, by heating the chocolate and melt it
5. Add coffee to the mixture
6. Remove from heat and beat in the chilled butter one piece at a time
7. Continue beating till smooth
8. Chill the mixture until thick and spreadable

MAKING
9. Use a coarse sieve and rub the cheese through it
10. Collect the cheese in a bowl and mix well with a wooden spoon
11. Beat well to froth it up
12. Add cream, sugar, sherry and mix well again
13. Beat again to make it smooth
14. Add in the fruit and the chocolate
15. Spread this mixture on the bottom slice of the cake
16. Place another slice of cake on top of the filling
17. Layer another layer of ricotta mixture
18. Repeat the process till all the ricotta mixture and layers are complete
19. Gently press the layers together to sandwich the layers together
20. Chill till firm for two hours

FINALIZING
21. Spread the frosting on the cooled cake evenly
22. Refrigerate for 24 hours before serving

SERVING
23. Serve chilled
