Chicken Parmigiana

Ingredients
  Egg 1
  Safflower oil 2 Tablespoon
  Whole chicken breasts 3 , boned, skinned, halved
  Italian flavored bread crumbs 1⁄2 Cup (8 tbs)
  Part skim mozzarella cheese 3 Ounce, sliced
Directions

MAKING
1. In a shallow dish, whip eggs and oil together; add breadcrumbs to another such shallow dish
2. Roll the chicken in the egg mixture first and then the breadcrumbs and place it on a baking tray or cookie sheet
3. Bake for twenty minutes in an oven preheated to 450°F and turn the pieces around once
4. Top each piece with a slice of cheese, return to the oven and allow to heat only till the cheese melts

SERVING
5. Serve as appropriate
