Meatless Minestrone

Ingredients
  Split peas 3⁄4 Cup (12 tbs)
  Barley 1 Cup (16 tbs)
  Red beans 1 Cup (16 tbs) (Cooked Separately)
  Swiss chard leaves 2 Large, cut in small pieces
  Carrots 2 , cut in small pieces
  Celery stalks 3 , cut in small pieces
  String beans 8
  Onion 1 Large, chopped
  Garlic 1 Clove (5 gm), mashed
  Tomatoes 2 , cut in quarters
  Oil 2 Tablespoon
  Chopped parsley 2 Tablespoon
Directions

MAKING
1) In a pressure cooker add all the ingredients except the red beans alongwith 2 qts water.
2) Allow to cook at a pressure of 15 lbs for 35 mins, then let the pessure reduce gradually.
3) In a pan, cook the red beans and stir into the soup when ready to serve.

SERVING
4) Pour in soup bowls and serve immediately.
