Black Eyed Peas Salad and Collard Greens Dip

Preparing for the New Year? Why not cook something which will start the New Year with a big bang? Try making Black eyed peas salad and Collard greens dip. Black eyed peas are especially cooked in the New Year’s to bring good luck and collard green dip is a great accompaniment for chips. Here’s to a great start!
  Black eyed pea 1 Can (10 oz) (for black eyed peas salad)
  Olive oil 2 Teaspoon (for black eyed peas salad)
  Vinegar 2 Teaspoon (for black eyed peas salad)
  Bell pepper 1 Medium, chopped (for black eyed peas salad)
  Green onion 1 Medium, chopped (for black eyed peas salad)
  Chili 2 Medium, chopped (for black eyed peas salad)
  Tomato 1 Medium, diced (for black eyed peas salad)
  Collard green 2 Cup (32 tbs) (for collard greens dip)
  Walnuts 1⁄3 Cup (5.33 tbs) (for collard greens dip)
  Garlic 2 Clove (10 gm) (for collard greens dip)
  Parmesan cheese 1⁄3 Cup (5.33 tbs) (for collard greens dip)
  Dried basil 1 Teaspoon (for collard greens dip)
  Black pepper powder 1⁄4 Teaspoon (for collard greens dip)
  Salt 1⁄2 Teaspoon (for collard greens dip)

For Black-eye peas salad:
1. Rinse and drain the can of black eyed peas. Take it in a bowl.
2. Add oil, vinegar, bell pepper, green onion, chili and tomato. Mix it well and refrigerate.
For collard greens pesto:
3. In a pot, plat vegetable steamer and add enough water to touch the bottom of the steamer.
4. Bring water to a boil.
5. Wash collard greens and remove leaves from thick center stems. Roll leaves and chop into bits.
6. When water is boiling fiercely, place the greens in the pot and steam for 4 minutes.
7. Drain the greens and set aside.
8. In a skillet, toast walnuts until lightly browned. This may take 7-8 minutes on a medium high flame.
9. In a food processor, take walnuts, dried basil and garlic. Pulse to chop the walnuts.
10. Add the greens, parmesan cheese, olive oil, salt and pepper and pulse until well mixed.

11. Refrigerate until ready to serve.

12. Serve Black eyed peas salad as it is and Collard Green pesto with chips.
