Baked Halibut Sicilian Style
|Halibut steaks||700 Gram|
|Olive oil||2 Tablespoon|
|Onion||1 Large, chopped|
|Celery stick||1 , chopped|
|Ripe tomatoes||4 , peeled and quartered|
|Medium dry white wine||6 Tablespoon|
|Green olives||12 , stoned and chopped|
|Chopped fresh parsley||1 Tablespoon|
Wipe the fish, cut into portions and arrange in a buttered shallow heatproof dish.
Heat the oil and over gentle heat fry the onion and celery until soft but uncoloured, about 5 minutes.
De-seed the tomatoes and add the chopped flesh to the pan with the wine and water, season with salt, pepper and sugar.
Stir until boiling and simmer for 5 minutes.
Add the olives and capers and pour over the fish.
Bake in centre of the preheated oven, basting occasionally.
Sprinkle with the parsley and serve hot in the same dish.
