Neapolitan Pork Chops with Mushrooms
|Olive oil||3 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Pork chops||6 , trimmed|
|Tomato paste||2 Tablespoon|
|Dry white wine||1⁄2 Cup (8 tbs)|
|Mushrooms||1 Pound, sliced|
Heat olive oil in heavy skillet and brown garlic and pork chops in it on all sides.
Pour off excess fat.
Season chops with salt and pepper.
Add tomato paste, wine, and mushrooms.
Simmer, covered, for 40 minutes to 1 hour, depending on thickness of chops.
Stir occasionally and add a little water if necessary.
