Sicilian Macaroni And Eggplant Casserole

Ingredients
  Eggplant 1
  Olive oil 2 Tablespoon
  Macaroni 1 Pound
  Salt 3⁄4 Teaspoon
  Dried oregano 1 Teaspoon, crumbled
  Dried basil 1⁄2 Teaspoon, crumbled
  Pine nuts 1⁄2 Cup (8 tbs)
  Parmesan cheese 1⁄2 Cup (8 tbs), grated
  Tomatoes 1 Cup (16 tbs)
  Butter/Margarine 2 Tablespoon
Directions

GETTING READY
1) Preheat moderate oven (350°F.)
2) Make 1/4-inch slices of unpeeled eggplant.

MAKING
3) In a skillet heat oil.
4) Brown eggplant in it.
5) Boil water and add macaroni in it. Cook till tender. Drain.
6) Grease a 2-quart casserole.
7) On the bottom arrange half of macaroni.
8) Layer with half of eggplant.
9) Sprinkle on it half of salt, mixed oregano and basil, pine nuts, and Parmesan.
10) Repeat the layers.
11) Add tomato on top.
12) Dot with butter.
13) Bake in oven for 30 minutes.

SERVING
14) Serve hot.
