Red Wine Italian Dressing

Ingredients
  Wine vinegar 3⁄4 Cup (12 tbs)
  Red wine 2⁄3 Cup (10.67 tbs)
  Garlic 1 Clove (5 gm)
  Salt 1 Teaspoon
  Capers 2 Teaspoon
  Mustard seed 1 Tablespoon
  Green peppers/Red peppers 2
  Prepared mustard 2 Teaspoon
  Black pepper 1 Teaspoon
  Dried rosemary 1 Teaspoon
  Dried oregano 1 Teaspoon
  Oil 1⁄2 Cup (8 tbs)
Directions

Mix the vinegar and red wine together, and leave for 1 hour.
Finely chop the garlic, then pound in a mortar with a pestle.
Add the salt, capers and mustard seed and pound to a paste.
Remove the cores, pith and seeds from the peppers and cut into very thin slivers.
Put the vinegar mixture and garlic paste in a saucepan.
Bring to the boil, stirring, then add the mustard, pepper, pepper slivers, rosemary and oregano.
Remove from the heat, stir in the oil and allow to cool.
This dressing is delicious with vegetable salads, such as asparagus, cauliflower, mushroom, pepper and artichoke, as well as with fish and cooked meat salads.
