Lobster Mornay

Ingredients
  Lobster meat 454 Gram
  Butter 60 Milliliter
  All purpose flour 60 Milliliter
  Fish broth/Chicken broth 250 Milliliter
  Light cream 250 Milliliter
  White pepper 3 Milliliter
  Freshly grated parmesan cheese 125 Milliliter
Directions

Dice the lobster meat.
Heat the butter in a small sauce pan.
Saute the lobster, remove and reserve.
Add the flour to the pan and reduce heat.
Cook 2 minutes.
Add the broth, cream and pepper.
Simmer until sauce thickens.
Add the cheese and lobster and continue to cook for 5 minutes.
Serve with a rice pilaf.
