Pickled Herring Bruschetta
|Roma tomatoes||1 Cup (16 tbs), peeled, seeded, diced|
|Garlic||6 Clove (30 gm), minced|
|Pickled herring||8 Ounce, chopped (1 Jar, Vita)|
|Fresh chopped basil||2 Tablespoon|
|Sourdough bread slices||8 (1/2 Inch)|
|Extra virgin olive oil||5 Tablespoon (1 Tablespoon Plus 2 Ounce)|
1. Combine roma tomatoes, garlic, herring, basil, and extra virgin olive oil. Season to taste with salt and pepper.
2. Brush the remaining olive oil on the sliced bread and grill them before serving with chilled bruschetta mixture.
