Pickled Herring Bruschetta

This yummy new appetizer is a blend of fresh tomatoes, garlic, pickled herring and basil served with grilled Italian bread.
Ingredients
  Roma tomatoes 1 Cup (16 tbs), peeled, seeded, diced
  Garlic 6 Clove (30 gm), minced
  Pickled herring 8 Ounce, chopped (1 Jar, Vita)
  Fresh chopped basil 2 Tablespoon
  Sourdough bread slices 8 (1/2 Inch)
  Salt To Taste
  Pepper To Taste
  Extra virgin olive oil 5 Tablespoon (1 Tablespoon Plus 2 Ounce)
Directions

1. Combine roma tomatoes, garlic, herring, basil, and extra virgin olive oil. Season to taste with salt and pepper.
2. Brush the remaining olive oil on the sliced bread and grill them before serving with chilled bruschetta mixture.
