Italian Style Shrimp And Rice

Ingredients
  Olive oil 1 Tablespoon
  Garlic 1 Clove (5 gm), minced
  Long-grain rice 3⁄4 Cup (12 tbs)
  Canned chicken broth 14 1⁄2 Ounce (1 Can)
  Peeled deveined medium shrimp 12 Ounce (Use Either Fresh Or Frozen)
  Canned italian style stewed tomatoes 14 1⁄2 Ounce
  Zucchini 1 Medium, halved lengthwise and thinly sliced
  Thinly sliced green onions 1⁄4 Cup (4 tbs)
  Snipped fresh basil/1 teaspoon dried basil, crushed 2 Tablespoon
  Shredded mozzarella cheese 1⁄4 Cup (4 tbs) (Or Finely Shredded)
  Parmesan cheese 1 Ounce
Directions

1. In a large skillet heat oil; add garlic and rice. Cook and stir 2 minutes. Carefully add broth. Bring to boiling; reduce heat. Simmer, covered, 15 minutes or till rice is tender and water is absorbed. Stir in shrimp, tomatoes, zucchini, onions, basil, and 1/8 teaspoon pepper. Return to boiling; reduce heat. Cook, covered, 2 to 3 minutes or till shrimp turn pink. Remove from heat. Sprinkle with cheese. Cover and let stand 2 minutes.
