Tomato Pesto Toasties
|Crusty bread slices||2 (2 Thick Slices)|
|Low fat soft cheese/Low fat fromage frais||45 Milliliter (3 Tablespoon)|
|Pesto||2 Teaspoon (Red / Green)|
|Black pepper||To Taste|
1. Toast the bread slices on a hotgrill until golden brown on both sides turning once. Leave to cool.
2. Mix together the skimmed milk soft cheese and pesto in a small bowl until well blended, then spread thickly on to the toasted bread.
3. Cut the beef tomato and red onion, crossways, into thin slices using a large sharp knife.
4. Arrange the slices, overlapping, on top of the toast and season with salt and pepper. Transfer the toasties to a grill rack and cook under a hot grill until heated through, then serve immediately.
