Italian Vegetable Dish

Luci Lock shows you how to make a warming dish of comfort food using fresh Italian ingredients.
Ingredients
  Onion 1⁄2 , roughly chopped
  Tomatoes 2 , roughly chopped
  Basil sprig 2 , roughly chopped (Organic)
  Zucchini 1 , chop
  Eggplant 1 , chop
  Green bell pepper 1 , chop
  Garlic cloves 4 Small, chop
  Tomato puree 2 Cup (32 tbs)
Directions

GETTING READY
1. Preheat oven to 220 degrees Fahrenheit.

MAKING
2. In a dutch oven pan, add the onions, zucchini, green bell pepper and tomato.
3. Add the roughly chopped basil in there as well along with the garlic cloves and tomato puree.
4. Put the lid on the pan and pop into the oven for 2-3 hours.

SERVING
5. Plate and serve hot.

TIP
You can choose to use your favorite selection of vegetables, keeping the basic ingredients intact.
