Italian Grilled Vegetables
|Salad dressing||1⁄2 Cup (8 tbs)|
|Dressing||1⁄2 Cup (8 tbs)|
|Zucchini||2 , cut in half lengthwise|
|Summer squash||2 , cut in half lengthwise|
|Green peppers/Red / yellow peppers||2 , cut into quarters|
Preheat electric broiler (not necessary to preheat gas broiler).
Mix together dressings until well blended.
Lightly score cut sides of vegetables; brush one side with salad dressing mixture.
Place vegetables, salad dressing side up, on rack of broiler pan 4 inches from heat.
Broil 6 minutes.
Turn; brush with salad dressing mixture.
Continue broiling 6 minutes or until vegetables are tender.
