Chargrilled Vegetables With Pesto

Ingredients
  Capsicum 1 , cut into pieces (Pepper)
  Eggplant 1 , cut into slices (Aubergine)
  Red onions 2 , quartered
  Zucchini 2 , sliced lengthwise (Courgette)
  Sweet potato 1 Small, thinly sliced
  Olive oil 1 Tablespoon
  Pesto 1⁄2 Cup (8 tbs) (Of Your Choice)
Directions

1. Prepare vegetables for grilling.
2. Grease and heat a chargrill pan. Brush vegetable slices with a little olive oil and chargrill until golden brown and vegetables are cooked.
3. Serve with pesto or basil aioli.
